Christmas Gingerbread Men/Women by Chef Walsh x

As all my friends and family know I love cooking! Never been taught or shown, but I love to practice weekly as a hobby and interest. 

Here some gingerbread men I decided to make for recipe below.

Makes 20


- 350g/12oz plain flour, plus extra for rolling out

- 1 tsp bicarbonate of soda

- 2 tsp ground ginger

- 1 tsp ground cinnamon

- 125g/4½oz butter

- 175g/6oz light soft brown sugar

- 1 free-range egg

- 4 tbsp golden syrup

To decorate

- writing icing

- cake decorations

1. Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into the bowl of a food processor. Add the butter and blend until the mix looks like breadcrumbs. Stir in the sugar. 

2. Lightly beat the egg and golden syrup together, add to the food processor and pulse until the mixture clumps together. Tip the dough out, knead briefly until smooth, wrap in clingfim and leave to chill in the fridge for 15 minutes.

3. Preheat the oven to 180C/350F/Gas 4. Line two baking trays with greaseproof paper. 

4. Roll the dough out to a 0.5cm/¼in thickness on a lightly floured surface. Using cutters, cut out the gingerbread men shapes and place on the baking tray, leaving a gap between them. 

5. Bake for 12-15 minutes, or until lightly golden-brown. Leave on the tray for 10 minutes and then move to a wire rack to finish cooling. When cooled decorate with the writing icing and cake decorations.

Skala in Kefalonia Greek Island staying at Regina Del Aqua 5* Hotel

As a huge fan of Greek food and culture and also travelling and living on one for a year, it is so nice to stay within a traditional designed hotel sometimes instead of the super modern ones to experience the real 'feel' of a place. 

Nothing beats sunshine, tanning, good food, seeing the hidden gems of a country and being near the sea.

Here I am relaxing in Kefalonia's Regina Del Aqua 5* traditional boutique hotel in Skala, enjoying the stunning view of the Mediterranean sea. This quiet hotel is so peaceful perfect to peacefully sunbathe with only a 8 minute walk into Skala town,

The pool was virtually empty every day and we and buttons by our sun loungers to call the waiters which was a nice bonus. 

Veeraswamy - One of the first Indian restaurants in London

So I had heard about Veeraswamy's on Regent Street in London for a while, and as a huge curry fan I had to check it out! I took my mother for her birthday with my brother, and I have to admit it was one of the best curries I had ever had. Founded in 1926 this amazing Indian restaurant is hidden away above a shop on Regent Street, the entrance is on Swallow street where you enter a narrow entrance and get a lift up to the first floor.

The decor was very traditional with the air smelling of fragrant spices and soft lighting.

With petals on the table we were placed over looking the busy regent street below watching the world go by which was really magical. , mango chutney and fresh onion mix, however their dips were a bit unusual but it is all part of the experience.
We ordered a selection of starters, mains, puddings and drinks to sample the whole experience. The Lobster Malabar was out of this world with such a creamy tomato sauce! I was however thrown as I do love my traditional dips for my poppadoms which I am used to getting (pickled chilli vegetables, mint sauce yogurt, mango chutney and fresh raw onions) instead their dips were slightly unusual flavours but it was all part of the experience.

Overall it a lovely meal which I would say is worth going to say you've been, or for a special occasion. Best curry I have ever had!
